Red Yeast Rice has been a part of traditional Chinese medicine since at least A.D. 800. It is made by fermenting Monascus purpureus, a type of yeast, over red rice. Red yeast rice inhibits the action of an enzyme in the body called HMG-CoA reductase, which is known to increase cholesterol.
